Equally impressive is the seven-spiced cured smoked salmon, a beloved staple for over 25 years. As a native of France, I have often refrained from trying certain dishes, fearing disappointment due to the high culinary standards I grew up with. Yet, Canoe consistently exceeds my expectations. Their farm-raised fish, sourced from George’s Bank in Massachusetts, showcases a distinct quality. With a single bite, the soft, flavorful texture and oceanic salinity were immediately apparent. Paired with a layer of Yukon gold potatoes, crème fraîche, and goat cream, and topped with chives and basil oil, this dish offers a delightful contrast of crunchy and creamy elements—truly unbeatable.
Next, I indulged in the maple-braised rabbit. For those hesitant to venture beyond familiar fare, I recommend sticking to what you know. However, after enjoying the kangaroo, I felt emboldened to try the rabbit, which surprised me with its tenderness and sweetness, reminiscent of chicken yet far superior. It was elegantly plated atop a bed of carrot beurre blanc, accompanied by handmade four-cheese ravioli and finished with a candied garlic jus—an exquisite balance of flavors.

Now, onto dessert, my server, Brandon, recommended the house-made popcorn ice cream sundae, generously tossed with butter-salted caramel, Cracker Jacks, and Chantilly cream. Although I am not typically an ice cream enthusiast, Canoe once again impressed me. The balance of salty and sweet was exquisite—neither overpowering nor cloying. It transported me back to my childhood, evoking the simple joys of life. This delightful creation was the perfect conclusion to my meal.
